Easy Seedy Crackers (gluten-free)

Delicious crackers, reminiscent of one of my favorite brands: Mary’s Gone Crackers. Simple to make and perfect to pair with avocado, nut butter, cheese, hummus and more. If you’re not gluten intolerant, replace ¼ cup of the water with tamari for a taste closer to Mary’s (optional: ¾ cup water and ¼ cup tamari, omit salt).

½ cup sunflower seeds
½ cup pumpkin seeds
¼ cup sesame seeds
¼ cup poppy seeds
¼ cup flax seeds
¼ cup chia seeds
½ teaspoon Maldon sea salt

1 cup water

Method
In a medium-size bowl, toss all the seeds together.

Measure 1 cup of water and mix in the sea salt.

Pour the salty water over the seeds and mix thoroughly.

Let sit for 20 minutes while the chia seeds do their magic.
Preheat the oven to 340°F/170°C.

Spread the seeds evenly over the baking sheet (approximately 1/16 inch or 2mm).

Sprinkle with herbs or Maldon Sea Salt.

Bake for 30 minutes.

Remove from oven and cut into crackers.

Place cut crackers onto parchment paper and bake for 30 minutes until golden. *If the bottom of the cracker is still wet when flipped over you may need to flip all the crackers and bake approximately 10 more minutes to remove any extra moisture.

Once cooled, store in an airtight container for a week. Enjoy on their own or with nut butter, cheese, fruit, etc.
