Never Separates French Vinaigrette
This salad dressing stays together and doesn't separate due to the mustard action as an emulsifier.
1 Tablespoon (rounded) of Dijon mustard
2 Tablespoons of balsamic
sea salt & pepper to taste
3-4 Tablespoons Extra virgin olive oil
Toss with:1 head of lettuce, tangerine segments, grapefruit segments, sweet red pepper, diced handful of cooked shrimp
Method
With a fork mix the dijon and balsamic together.
Add sea salt and black pepper to taste.
With a fork, mix in the extra virgin olive oil until it has emulsified. Drizzle onto your favorite lettuce leaves.
*Optional add an organic, pasteurized egg yolk for a richer dressing.
