Quick Lentil with Shredded Chicken

This is a quick meal to whip up if you have leftover shredded chicken or turkey and makes your leftovers new again by dressing them up. This is also a great meal to pack for lunch and eat cold, room temperature or hot. It's also made it into a few picnic baskets over the years.

1 cup of brown or green lentils, rinsed & drained

2 cups of water

½ onion, diced

1 garlic clove, diced

1 stalk celery, small dice

1 tomato, diced

1 cup cooked chicken (or turkey), shredded

1 Tablespoon parsley, finely chopped

1 green onion, finely slivered

sea salt to taste

Method

In a pot add water and lentils, cover over low heat until tender. Approximately 25 minutes.

In a sauté pan over medium heat, sauté onion, garlic, and celery for 3-5 minutes.

Add the tomato and let the liquid reduce for 1-2 minutes.Then, add the shredded turkey or chicken. Stir well.

Season with salt and add the cooked lentils.

Serve in a bowl topped with parsley and green onion.
