Old-Fashioned Rhubarb Oatmeal

Back in 2016, I stayed at the Old Pioneer Garden, in Unionville, Nevada, which is near the infamous Black Rock Playa of the annual Burning Man festival. Mitzie, the 93 year old owner was still serving up a hearty, old-fashioned breakfast for B&B guests and this was one of my favorites. I subbed maple syrup for sugar to make it more low sugar.

4 Tablespoons water
1 thin stalk rhubarb (or ½ extra thick stalk), diced
1 Tablespoons maple syrup
scant 1/2 cup (40g) old-fashioned oats
2/3 cup (150ml) water
Toppings: dried vanilla bean powder & cinnamon

Method
In a small saucepan place the diced rhubarb, water and maple syrup. Heat on medium heat and cook for 5 minutes, stirring frequently.

Add oats and water and cook 3-5 minutes until oats have fully cooked. Ladle into a bowl and top with vanilla bean powder and cinnamon. Enjoy.
