Grain-free Crunchy Yogurt Topping

Rapadura sugar is not separated from the molasses and maintains a bit more vitamins and minerals than regular refined, white sugar. Jo Whitton (from quirkycooking.com.au), says, ‘It still has the natural balance of sucrose, glucose, and fructose, and contains components essential for its’ digestion. It is metabolized more slowly than white sugar, and therefore will not affect your blood sugar levels as much as refined sugars. The more refined the sugar, the quicker it raises your blood sugar levels.’ **This also tastes great if you omit the Rapadura sugar.

1 cup coconut, finely shredded & unsweetened

1 Tablespoon poppy seeds

1 Tablespoon sunflower seeds

1 Tablespoon flax seeds

1 Tablespoon sesame seeds

1 Tablespoon pumpkin seeds

1 Tablespoon rapadura or coconut palm sugar

Method

In a small bowl, mix all ingredients well.Transfer to an airtight jar and top your favorite yogurt. Store for 1 month.*

Optional: In a cold saute pan add the coconut flakes. Heat over medium heat, lightly toast the coconut flakes for approximately 60 seconds - just until the coconut begins to take on a golden hue. Remove from pan and allow to cool before mixing other ingredients.
